Potato and Bacon Soup
– 3/4 lb. of bacon (coarsely chopped)
– 2 lb. of potatoes (coarsely chopped)
– 1 cup of chicken stock
– 1 1/4 cup of sour cream
*cook bacon until crisp
*add potato, stock and 2 cups of water bring to a boil
*reduce heat, simmer, and covered until potato is tender.
*add sour cream, stir until heated through.
*remove from heat and let cool for a couple of minutes
